Pasteles (or "pateles" as Hawaiians pronounce them) are a Puerto Rican Christmas dish that was adopted by Hawaii during the plantation era. Made with pork or seafood and mixed with green plantain masa pasteles are tamale-like parcels wrapped in plantain leaves and boiled. A special addition to this dish is achiote a deep red spice blend used to add color to the dish and a sweet nutty flavor.
