I am a dedicated pie baker through and through. I grew up eating countless pies with my family and have spent my adult life perfecting crusts and fillings from flaky to crispy to fruity to creamy. I have even entered a few pie contests and won a blue ribbon.
This is not meant to be a self-praise. The point of all this bragging is this: Even I don’t feel like making a good pie sometimes. The thought of making the crusts rolling them out cooking the filling baking it and then letting it cool or refrigerate makes me tired before I even get started. When I’m in the summer mood I reach for shortcuts as delicious as this pandowdy.
