Pecan Meringue Cookies are a classic cookie to make for the holidays especially Easter! They are called Easter Cookies or Resurrection Cookies and are made with whipped egg whites sugar and pecans.

The tradition is to put them in a hot oven the night before Easter turn off the heat and go to bed. The next morning you wake up to sweet light clouds of meringue cookie pecan fluffiness.

They are crispy on the outside and deliciously fluffy on the inside. And so easy to make!
