These are asparagus noodles as in ASPARAGUS that you shave thinly so that they look and act like fettuccine noodles. Hoooooly goodness. I mean it. The day I made these I literally could not stop talking about them. I yelled at everyone in the studio: look at these! look! aren't they pretty! hey! you! look look look! It's a magic trick you can eat.
