As promised here is the recipe for pine nut and rosemary shortbread that I used for my last batch of Christmas cookies. Shortbread dough – a simple mix of butter sugar flour and salt is a wonderful canvas for exploring different flavour combinations. I have added a chunky ginger version to Super Natural Cooking. This version is a little different it features perfectly golden lightly chopped pine nuts and just enough rosemary and lemon zest to infuse the buttery sweet dough with their scent and flavour.
