What sets PopOS apart is the desktop experience. What they've done with the desktop is integrate most of the features that GNOME builds into the business layout, into their own modules. By default, you get a dock, which may or may not extend to the edges of the screen, you get a large application launcher that opens as a window, not full screen, and a Dedicated WORKspaces view, plus a launcher.
That's the good thing: YOU decide. All of these tools definitely perform parts of the same function, and so you can choose which ones you want to keep and which ones you don't.
The same goes with the apps grid: you can open it with the apps button at the top left, or the dock icon, or set the super key to open it. It opens in a window, so it doesn't block your entire screen, and it has a very nice implementation of folders: instead of having folders integrated into the rest of the applications, each folder you create has its own tab in low, so it's much easier to access, even if you lose drag-and-drop rearranging of apps or creating folders. You need to click on the create folder icon to create one.
You also get a launcher, which is probably the least polished tool implemented here. It can also search files, recent documents, browse the file system, run a terminal command, perform calculations, search the web, or even run an sh command.
Gestures on PopOS are a mixed bag. First, aside from switching virtual desktops, these aren't 1:1 gestures. Second, gestures cannot be configured.
There is also a handy auto-created recovery partition and you can update it directly from Settings.
PopOS has a nice system-wide feature: it lets you switch from a classic window manager, with floating windows, to a tiled window manager that can be used entirely from the keyboard. It's right there at the top of the panel.
Just press SUper Y and all your windows will automatically tile nicely. There you can either use the mouse to resize them, stack them on top of each other to create tabs, or move them to a different position. Or use the keyboard to do the same, all shortcuts are explained right in the indicator panel.
PopOS uses PopSHOP, a graphical application based on the basic appCenter operating system, instead of GNOME software. PopOS adds its own repositories with a bunch of apps that aren't in Ubuntu's repositories or are available as snap packages on Ubuntu, and they come with flat hub ready to use.
PopOS also generally has more up-to-date internals, with newer kernels than Ubuntu, more up-to-date mesa drivers, they are not limited to just security updates, they integrate the latest stable versions of a large part of the software stack. .
It's also the only distro I've used that offers a good way to switch between integrated graphics and dedicated GPUs on hybrid laptops.
