My wife has taught me many things but few things are as mind-boggling and useful as this five-ingredient one-pot 30-minute Colombian chicken stew. Here’s how it works: Place the chicken potatoes fresh tomatoes sliced onions and bay leaves in a pressure cooker. Cover and heat. As the tomatoes and chicken heat they release liquid that cooks the potatoes while the onions add flavor. Because the high temperature of a pressure cooker cooks so efficiently you get tender chicken and potatoes in a richly flavored broth in 30 minutes or less. How about that!

The concept of using minimal but carefully selected ingredients and relying on the pressure cooker to extract flavor as it cooks was intriguing so I decided to try my hand at coming up with a few more one-pot meals in a similar style this time combining chicken and various legumes. It provides dinner for four using inexpensive ingredients a few minutes of actual labor a pot on the stove and all in about an hour from start to finish.
