The perfect prime rib
Prime rib takes center stage during the holidays and for good reason. It’s the king of beef cuts. A bone-in prime rib roast is also called a standing rib roast because you place the roast majestically on the ribs in the roasting pan to cook it.
This roast is beautifully marbled with fat and is juicy and tender: a feast for the eyes and the belly.
It’s also very easy to cook. You simply start it in the oven at a high temperature to get a nice browning on the outside of the roast. Then cook it at a lower temperature to make sure the meat doesn’t get overcooked in the middle.
