Pumpkin muffins with maple cream cheese filling
I wish I could say I wasn't so shallow but the prospect of eating about 50 of these little guys is what got me out of bed this morning. That and the fact that I could tell you about it.
Pumpkin Bites with Maple Glaze. Definition: Little two-bite nuggets of pumpkin oatmeal and maple syrup baked into a cross between a pumpkin cookie (which I have never liked by the way so if you’re on the fence – feel encouraged) and a pumpkin scone (which I love by the way) and a pumpkin muffin (obsessed).
They’re not as flat as pumpkin cookies and they’re probably a little thicker than a fluffy muffin. This makes them a sort of magical cookie-scone-muffin mashup that makes for a perfect soft-baked dip for your morning coffee. And just in case you’re a weirdo who STILL isn’t convinced that they’re drizzled with my all-time favorite maple glaze. So… need I say more?
