The base of this cabbage and apple salad is (you guessed it)…cabbage! Since it’s used in classic kimchi we tested this salad with Napa cabbage first but ended up preferring the firmer texture of green or purple cabbage.

After thinly slicing the cabbage we massage it well with salt for a subtle crunchy texture and better digestibility! Apples carrots and spring onions add color and provide the perfect balance between sweet and savory!
