This Mexican fideos recipe is simple quick and delicious. It is great as a light meal or side dish. There are many ways to prepare fideos but for me this is the quickest. When adding the chicken stock you can add some tomato sauce and a pinch of cumin for extra flavor. Add less water if you want drier pasta.
