I know you all love a good quinoa salad. And my apologies that it has been a while since I featured one here. I waited until I came across the right one. And here it is 🙂 It was a quirky mix of spring onion dill sesame lemon and currants that caught my eye in this version from Maria Speck's new book. Crumbled feta adds a bit of saltiness to accentuate the sweetness of the currants and grated zucchini adds a juiciness that can be lacking in some grain salads. All in all very tasty.
