How to Cook Swiss Chard That Melts in Your Mouth

As a kid I was obsessed with all things rainbow: my Rainbow Brite doll a brand new Crayola 64-pack (with built-in pencil sharpener!) and best of all the rainbow neon terminal at O'Hare Airport. Pure magic. These days I have a new adult rainbow obsession: rainbow Swiss chard.

If you’ve never cooked with rainbow chard before it has a slightly bitter earthy flavor that I love to pair with sweet tangy and nutty notes. In addition to its gorgeous vibrant color it has a special superpower: it’s kind of like two greens in one! Not only can you use the leaves but the stems are also delicious adding a nice crunch to a stir fry a simple vegetable side dish or a bowl like this. Just saute them for a few minutes before adding the greens to the pan or brine them for extra bright flavor.

These bowls are simple and warming. They put the rainbow chard front and center so they’re a great way to showcase a big bunch of greens from the farmers market. To make them I cooked up some whole wheat orzo and tossed it with a little olive oil garlic Dijon mustard and lemon. (Mustard and chard are such a great flavor combination.) I topped each bowl with a healthy portion of sauteed rainbow chard a little feta cheese and some toasted walnuts.
