Recaito is a green aromatic puree of onions culantro (recao) leaves garlic green peppers and ajíes dulces (small sweet chili peppers). It is central to many Puerto Rican dishes; recaito is used as a base seasoning known as sofrito. When preparing Puerto Rican dishes you may come across it in recipes with both names.

There may be some differences however. Note the absence of tomatoes. Traditionally Spanish sofrito contains tomatoes resulting in a red product. Puerto Rican sofrito on the other hand does not contain any tomato product so it retains the green color of the herbs.
You’ve probably seen this ingredient in jars from companies like Goya at the grocery store. And yes while you can certainly buy recaito the flavor of fresh recaito doesn’t compare to its mass-produced counterparts.
