Misticanza at Lupa Osteria Romana

Want a truly amazing mixed green salad packed with vibrant lettuce flavorful herbs and bitter greens? You won’t find it in the prepared salad aisle of your grocery store. Instead make your own using the freshest whole heads of lettuce radicchio herbs dandelion and more. This incredibly simple recipe is inspired by the Roman salad called misticanza which traditionally combines several wild greens. It’s unlikely that most of us can find those outside of Rome but we can capture the same spirit by combining a good mix of tender bitter greens and spicy greens.

About 8 cups wild and/or cultivated leafy greens and tender fresh herbs such as lettuce chicory endive radicchio dandelion purslane kale fennel fronds parsley tarragon chervil basil mint and preferably locally grown and in peak season and at freshness (see note)
