This asparagus leek potato soup is just a creation I came up with when my asparagus was looking a little old. At first I thought I would add a cream base but the soup didn't need it. The greens tasted great just the way they are. Even my soup and asparagus hater husband LOVED this! It's also a great way to use up expired greens in your crisper drawer!
