Whenever I feel like spicing up oven-roasted asparagus—for Easter brunch Mother’s Day or a spring dinner for example—I wrap the asparagus with thin slices of prosciutto. This is such an easy way to make roasted asparagus look fancy!
I also love how the salty flavor of the prosciutto complements the subtly sweet flavor of the roasted asparagus.
For this dish you will need asparagus that is fairly thick (about 16 to 18 spears per pound). Thin asparagus is harder to wrap in the prosciutto and dries out quickly in the oven.
