A local winery/restaurant serves a sausage-stuffed eggplant as an appetizer that is so good. When I tried to recreate it at home I found that this is one of our favorite eggplant dinners. Make sure to choose an eggplant that is smooth free of blemishes and a little heavy for its size. Serve with a green salad.
