I am a big fan of salmon skin especially when it is salted and a little crispy and chewy. This recipe gives me that. Plus the way it is cooked has a “steamed” quality. Do not remove the fillets from the plate or move them while they are cooking. I always use my cast iron skillet for this as it always gives the best results!
