I've been craving beans lately. Fresh summer bean salads to be exact. This easy Southwestern-style version combines jet-black beans fresh jalapeños and corn for a colorful picnic-friendly dish.
The salad gets its punch from a dose of bright but basic chili-lime vinaigrette which provides a critical dose of acidity that keeps the beans from tasting bland. When I first made this salad I felt like it was missing something. The trick was to add some textural crunch and an extra hit of salt with a sprinkling of corn chips. It turns out to be the perfect complement to the flavor of the sweet juicy just-shucked corn. After a final shower of cilantro this BBQ-worthy side dish is hard to beat.
