Bugnes are doughnut-like pastries that originate from Lyon and are a must-have for Mardi Gras. Making bugnes is a tradition I will never forget. I have loved them since I was a child. My mother’s bugnes (and now mine) have a little lemon for a unique flavor. Sprinkle them with icing sugar before serving.
