Bun bo hue is a spicy flavorful noodle soup from Hue a city in the central part of Vietnam. Hue is the former capital of Vietnam and was home to all the rulers emperors and dynasties. Therefore this regional cuisine tends to have more variety as well as more labor-intensive dishes such as bun bo hue. Personally this is my favorite city to eat in when I visit my motherland because the food is a bit more vibrant and spicy.
