How to Caramelize Onions in Fifteen Minutes

There really is no substitute for traditional caramelized onions cooked slowly over low heat. But in a pinch the process can be sped up with a higher temperature and a little water to prevent burning.
The trick is to use a heavier pan (a triple-layer stainless steel pan or an enameled cast iron skillet are ideal) that can transfer heat slowly and evenly preventing hot and cold spots that can be the bane of proper caramelization.
