I use this yogurt marinade a lot at home and it works just as well with boneless skinless chicken breasts as it does with the boneless skinless chicken thighs I call for here. Made with just a few ingredients it is quite aromatic and very flavorful and offers a plethora of sensations from the cool notes of mint to the warmer flavors of the garlic ginger chili and black peppercorns.

Part of the reason I like this preparation is the color and aroma. I have found that the gentle cooking called for in this recipe helps to preserve the vibrant green of the marinade. While there will be some browning around the edges of the chicken pieces browning and/or charring is not the goal. If you want your chicken to get a bit more brown you can remove the chicken earlier than directed and then slide the pieces under the broiler to cook through while a pronounced char develops but I find this unnecessary.
