If you love cheese there’s nothing quite like chile con queso. Melty cheese combines with tomatoes and chiles for a savory dip that’s perfect for dipping into lots of crispy tortilla chips. It’s often offered as an appetizer at Tex-Mex restaurants but it’s easy to make at home whenever the craving strikes.
For my version of queso dip I skip the highly processed Velveeta and use a combination of Monterey Jack for flavor and American cheese (which has more dairy fat than Velveeta) for stickiness. Chili powder and green chiles add a smoky spicy flavor. The onion powder and garlic powder add depth without having to cook any fresh vegetables. This dip only takes 20 minutes from start to finish.
