In the world of recipe writing it’s generally not a good idea to introduce a dish by saying that it contains an ingredient that you don’t particularly like. But that’s what I’m going to do and the ingredient for me is tahini. I don’t hate it I just don’t particularly like it. And yet I also believe that everything has its place and that if approached with skill and care it can win over even the most skeptical person.

Related to this is my “try at least five times preferably 10 times and possibly endlessly” rule which states that you should force yourself to eat a food you don’t like at least five times and—if you can tolerate it—as many times as necessary until you find something you like about it. I’ve learned to like a lot of things this way…except licorice.
