People often ask me about my preferences in pots and pans. I get this question politely asked in person via email at my local coffee shops… and I often feel like my answer isn't what the curious person wants to hear. Because I tend to buy pots and pans individually. I buy them based on what I'm cooking and how I'm cooking – based on functionality and personal preference. And so over the years I've collected and selected a motley collection. One that doesn't look much like any ready-made set you might come across (or sign up for). I've bought skillets at yard sales pots at flea markets and the occasional gem from eBay. Much of what I use now is enameled cast iron. It's a dream to cook with goes from stovetop to oven to grill and holds heat consistently and strongly. I've long since banned non-stick pans from my kitchen and now realize I never needed them. The pots I have now can handle most of what I throw at them even paper-thin pancakes like these.
