Chewy on the inside crispy on the outside and totally coconutty these little gems are a far cry from the oh-la-la pink purple or green macarons that replaced the cupcake for the 2008 Hot Bakery Trend. These are the cookies that cemented my admiration for coconut years ago. Growing up in a house without store-bought cookies or candies of any kind my brother and I were forced to improvise with my mother’s baking supplies. She always had Baker’s Angel Flake coconut in its iconic blue-and-white bag and dark chocolate the cornerstones of coconut macaroons.
A well-executed macaron for me meets three criteria: consistency taste and appearance. Appearance is the wild card here because these are iconic cookies and should be at least partially recognizable as such.
