There’s no science involved in making a crispy decadent fried oyster. The main trick is to drain your oysters very well so the cornmeal coating will stick to the oyster better and not float around and burn all over your fryer. Drain your oysters well and pat them dry; the less moisture there is on the oyster the better the coating will stick to it.

The second thing to consider is maintaining a consistent temperature in the frying oil. An instant read thermometer is always a handy tool to have on hand. Choose an oil with a high smoke point such as peanut or canola vegetable oil.
