Extra crispy tortilla pizza in strip form
I have to tell you: in the catalog of easy pizza recipes that start with some form of pre-baked bread flour tortilla pizzas have historically ranked pretty low on my list. Certainly lower than French bread pizza lower than English muffin pizza (my first love) and even lower than matzo pizza. They’ve always seemed a little too far removed from pizza tasting more like pizza-y open-faced quesadillas. Not bad but not what I seek out when I need a pizza fix.

I’m happy to report that all that has changed. I’m now going to take the stand that flour tortillas with the right technique a few tricks and a cast iron skillet are the best way to make thin crispy pizzas at home fast. The results are miles better than any frozen product and a lot better than most delivery options.
