Lemon simple syrup is a lemon-infused syrup that adds tons of flavor to whatever it’s stirred into or drizzled over. It’s super easy to make — all you need is lemon juice sugar and a little lemon zest — and it adds both sweetness and a lemony kick to cocktails and desserts. (It’s different from the kind of simple syrup you’d make for cocktails because you use lemon juice instead of water.)

Simple Homemade Preserved Lemon Syrup for Lemonade and Tea KOREAN STYLE / Lemon Syrup Recipe

Once covered and refrigerated lemon syrup has an almost indefinite shelf life. It’s mostly sugar so unless something really weird happens chances are you’ll use it up before any of it “expires.” (Technically people may say the syrup lasts six months but it’s possible for a jar of the stuff to last over a year in the fridge.) Having a party? Make a big batch and be prepared to use it in all sorts of cocktails—use it in place of simple syrup in a lemon drop martini for an extra layer of lemon zest or to sweeten a margarita.

It's best used to sweeten lemonade or iced tea for the best versions of those summer thirst quenchers you've ever tasted.

"This is a great recipe to have on hand for cocktails breakfast pastries or for macerating berries. It only takes a few minutes of active work and will make your whole house smell like a summer day. It will keep for a long time if you keep it in the fridge. I think you'll find lots of uses for it." —Tracy Wilk
