1 very ripe pineapple peeled cored and cut into pieces

2 tablespoons brown sugar

Puree the pineapple chunks in a blender until very smooth; transfer to a bowl. Stir in the brown sugar and rum then stir in the heavy cream. Pour the sorbet into a metal bowl; freeze for about 3 hours.
