What’s a sign of a good taqueria? The salsa of course!
Or should I use the plural and say "salsas?" Who doesn't love having a variety of salsas to choose from whether you're eating at a taco truck or an actual restaurant? There's often tomatillo salsa verde red chili salsa and my favorite is a fresh tomato salsa also known as pico de gallo or salsa fresca.
Fresh tomato salsa is best made with firm fleshy tomatoes. You can of course make the salsa with any type of tomato but firm tomatoes such as Roma or greenhouse tomatoes remain the best.
