How to Make Fried Coconut Shrimp (Recipe)

This was SO good! I couldn't believe how crispy the shrimp were. The sweetened coconut flakes are definitely the best choice. For the rice I used about a tablespoon of chopped parsley for seasoning and the zest and juice of half a lemon. I can't wait to make this again!

This gorgeous and perfectly springy shrimp and rice combo makes us feel the sun on our faces. The slightly sweet crunch of the coconut shrimp (with a nice and simple frying method so lots of crunch without frying smells) the bright sweet green peas that pop up here and there in the slightly lemony spicy rice. And then there is the honey butter sauce for sweet dips and drops that taste like vacation (inspired by this springy quinoa salad from long ago!).
