Mushrooms make me think of fall. Except for the morel. Like asparagus peas wild garlic and fiddleheads morels are a harbinger of spring and a welcome earthy counterbalance to the fresh grassy flavors of those other spring ingredients. Morels are also easy to prepare and cook as long as you know a few key pieces of information.

As you will see with many mushrooms the biggest risk with morels is that they will soften and rot. Look for morels that are fresh firm and dry – avoid morels that are either dried out and shriveled or soft wet and spongy.
