As Elise mentioned Yukon Golds make pretty spectacular mashed potatoes because they’re naturally buttery and dense. But what if you can’t find them at your friendly local market? You can substitute russets (also known as Idaho potatoes) for the Yukon Golds but be aware that russets are starchier and will result in fluffier lighter mashed potatoes. Use a lighter hand when mashing russets or you may end up with a sticky mess.
