I will never forget buying my first serious wok when I moved to Singapore. My husband and I walked into Chinatown and into a restaurant store. In the back was a small room filled to the brim with woks of all shapes and sizes. We picked out the one we wanted but as we were walking to the cash register one of the staff (an older Chinese woman) stopped us and sternly told us not to buy that wok because we definitely wouldn’t like it.
“Because food sticks to it” she replied.
