As the weather warms up my desire to fire up my oven grows less and less by the day. One of my favorite recipes that involves spending less time in a hot kitchen is hiyashi chuka cold ramen. The idea (and recipe) is simple enough: cold ramen noodles are topped with various vegetables meats and other goodies and then tossed in a vinegar dressing. The dish is refreshingly filling and quick to make.

There are several toppings you can add to hiyashi chuka. The classic combination that you will probably find in restaurants is grated eggs ham cucumber tomatoes crab stick and shrimp. But of course you can use whatever you like.
