Growing up in New Jersey one of my absolute favorite after-school treats was to walk into Ferraro’s and dig through my pockets for loose change and buy some garlic knots — garlic butter buns made from individual pieces of pizza dough. For 25 cents a pop I could buy a whole bunch of knots with a little change.
Garlic knots are a favorite at pizzerias and in New Jersey their presence was a sign that the pizzeria you walked into was legitimate.
Making knots is a frugal way to use up leftover dough and the leftover garlic-butter-parsley sauce that most pizzerias would use for their white pizzas or garlic bread.
