How to make pasta – without a machine
2 ½ cups Italian Tipo 00 flour plus extra for dusting
1 tablespoon water or as needed
Place flour on a marble or wooden work surface. Make a well in the center and crack the eggs into it; add the salt. Beat the eggs gently with a fork and incorporate the surrounding flour until the batter is thin. Using a dough scraper fold in the remaining flour until the dough comes together in a ball. Mix in water 1 tablespoon at a time if the dough feels too stiff.
