Summer weather in Korea isn’t just hot; it’s also incredibly humid thanks to our summer monsoons. We like to cool down with ice-cold dishes both sweet and savory. One of the easiest to make is oi naengguk (오이냉국) a beloved cold cucumber soup. Back in the days in our parents’ generation before air conditioning it was an ice-cold snack for people working in the fields under the blazing sun. They drank it down like water.
Nowadays recipes for oi naengguk are getting sweeter but as far as I can remember my grandmother only added Joseon ganjang (traditional soy sauce) to the thinly grated cucumber and water. Simple and delicious.
