Sweet sticky rice with coconut and mango {Khao Niaw Mamuang}

One of the most important qualities a chef must have is flexibility: the willingness and ability to change plans on a moment’s notice whether out of necessity or pure inspiration. For example I recently walked into a New York City grocery store with a shopping list for a simple bean salad I wanted to make when I saw a tall pyramid of Ataúlfo mangoes. When I left the store I had no beans in my bag. I had the mangoes plus coconut milk and Thai sticky rice. Just like that I had gone from a savory bean salad to a dessert of Thai sticky rice with coconut and mango (khao niao mamuang) all because it was Ataúlfo season.

If you’re not familiar with Ataúlfos they’re a Mexican mango variety that’s becoming increasingly available in the United States during the short season that runs roughly from March through July. They’re smaller and more slender than the large Tommy Atkins mangoes that are typically available but more importantly they’re sweeter more fragrant and more flavorful and less fibrous.
