Japchae (Glass noodles stir-fried with vegetables: 잡채)

Korean stir-fried noodles (chap chae or jap chae) is one of the most popular noodle dishes in Korea and also seems to be the dish that people new to Korean food like the most. The base of the dish is Korean glass noodles (dangmyeon) which is made from sweet potato starch.

The name glass noodles comes from the fact that the noodles in chap chae become translucent when cooked. They almost look like little glass spirals in the bowl. They can be sold as cellophane noodles or Korean vermicelli.

This dish is suitable as a starter or as a main course for lunch or dinner. It can also be served warm or cold depending on the season and your personal preference. And it is easy to make as a vegetarian dish.
