Royal. I think that’s the best word for a crown roast of lamb: racks of lamb tied together in the shape of a crown. And like the crowns that adorn the heads of monarchs a crown roast of lamb is all about presentation.

That might sound like an argument against making a crown roast—I mean why cook something just for the looks of it?—but it isn’t. Presentation is important especially at the holiday table and few roasts are as impressive as a crown roast.
