This is my take on the classic Greek chicken soup packed with vegetables herbs and lots of lemon. Tempering the eggs gives this soup a wonderfully creamy feel without any dairy and eating it takes me back to the streets of Athens.
It's a fairly simple recipe but you have to be careful when tempering the eggs so they don't curdle.
Take it easy the first time to avoid mistakes and make sure the soup doesn’t boil after adding the eggs as this can cause the soup to curdle. Even if you’re reheating in batches keep the pan on low heat and heat gently.
