There's an undeniable appeal in cooking fish whether it's Wisconsin-style fish or a Chesapeake Bay night of blue crab oysters and mussels or — as fate would have it — Low Country shrimp and greens simmering in a heavily spiced broth redolent of cayenne citrus and celery salt.
