Chickpea couscous bowls with tahini sauce
While I love the different flavors and spices found in Mediterranean cuisine one thing I like most about this cuisine is the way it often combines textures colors and even temperatures into one dish.
I created these vegan and gluten free bowls in the same spirit. They feature some of my favorite Mediterranean ingredients in one bowl like spiced chickpeas cucumbers tomatoes and tahini and a great mix of warm and cold crunchy and creamy!
One of my favorite parts of this dish is definitely the bright and creamy tahini sauce. We make this sauce regularly in my house. It’s also delicious drizzled over fresh leafy greens roasted veggies or baked sweet potatoes!
