I haven’t used Arborio or Carnaroli rice in my risotto adventures in a long time. I use pearl barley instead—and I love it. I know this is going to be a tough sell for some of you purists but in an effort to incorporate a wider variety of grains into my everyday cooking I started experimenting with pearl barley and other grains in place of the rice I used in traditional Italian risottos. I haven’t looked back since.
