These molten chocolate cupcakes are simple and elegant and they bake in under 10 minutes in a standard cupcake or muffin tin. The best part about these little beauties is that the cake batter is extremely forgiving: you can make it up to six hours before you want to serve the cakes. Fill the pans with batter and refrigerate but remember to remove the pans from the oven far enough in advance to allow the batter to come back to room temperature. Since they only bake for 8-10 minutes you can pop these little cakes in the oven while you clear away the main dishes and make coffee.
