Let’s face it: most mulled wine is boring. It’s too cinnamony too spicy too sweet. If there’s a party drink I don’t look forward to as much as the average mulled wine I don’t know what it is.
A few years ago I spent a very nice weekend contemplating and tasting several bottles of wine to figure out how to properly implement this neglected tradition. The short answer: most pre-packaged contemplation spices are junk and it’s best to contemplate your own wine with whole spices. I came up with a recipe I’ve been making since there was one with a touch of orange star anise brandy and maple.
